The verb is "jemandem etwas nehmen"
In the following line you have to change from singular to plural then!

The stars high in the heavens seem to us close enough to grasp
-> I'd chose sky here instead of heaven!

Stolz und würdig sollen sie tragen
pride and dignity they should convey
-> both stolz and würdig are adjectives in this case

Die Erinnerung an Freud und Leid auch noch in tausend Jahren
the reminder in good times and bad even through a thousand years
-> of good times and bad
Erinnerung an/von = memory/reminder of
Erinnerung in = memory/reminder in

Auf guten Wind und einen reichen Fang
of good wind and a rich catch
"auf" in this case would be translated as "for" or "to" as in "cheers to" since it corresponds with the "Krug erheben" in the next line, I think even "on" would be possible.
