My dad would always sing this old cowboy song he says he learned in elementary school during the 60's

Nikki, I swear, i think you and i are the only people in the whole world searching for this song. I think it's simply Don't Take My Hoss Away. I remember singing it in grade school in the 70s, but I dont recall the missing lyrics you need. I can't find it anywhere (and I mean no where) on the internet. How is that possible? It did show up briefly about 3 yrs ago, but nothing since, until I googled it about an hour ago and found your post. BTW, the version we sang in school used 'hoss' instead of 'horse'. Glad to find someone who knows this song.

I found an old book where the song (title most likely "Don't take my hoss away") is mentioned.
The book is called "Indoor Ceremonies and Pageants"
The entry is to find on page 17 (next to last row)

My dad learned it in grade school and sang it to me when I was a child, he must have changed it to horse. This is so helpful thanks!
