Such masterpiece song. This song is one of my favourites, I'm so luck to do something on it. I agree that here the old horse may mean an old man. I just didn't know this song is Venezolan (they were my neighboors). Well, Iglesias's version is a pout-pourri of two famous latin songs.

The dark red marked words are very technical terms. Let me explain some:

carutal, guamanchito = plants mostly common in Venezuela
alazana, falset, bit = terms from equinoculture, alazan is a race of horses, falseta is a kind of rein, bit is a kind of break for horses

Some words I already knew, others not. I advice you to visit this page in Spanish that clarifies all the terms of this songs and the ideas of the songs. By the way, I believe most of spaniards doesn't know much of the context of the song, and they should visit too. the link is here:
