"Ne" can be an adverb or a pronoun.
As an adverb can mean "from that/this place"
"sono andata via da quel posto" "me ne sono andata via da quel posto" (I left that place)

As a pronoun means "of him/her/it/them".. It's refered to something about which you've talked before. In your case the holidays/vacation, albeit the phrase could have been "poi quanto si parlerà delle vacanze".
"Hai qualche animale domestico?" "Ne ho due" (ho due animali domestici). ("do you have any pet?" "I have two pets")
"Quante lattine di birra abbiamo?" "Ne sono rimaste solo due" (sono rimaste solo due lattine di birra). (how many beer cans are left?" "Only two")
