La mulţi ani! Da, da, ştiu că esti surprins că mi-am aminţit. pasămite sunt ultima persoana că aşteptat să auzi astăzi! Oricum, doar voiam să-ţi dau dorinţe mele, ai grija de tine şi vom vorbi curand, distracţia buna!

"Azi" is the shortened form of "astazi", having the exact same meaning; the use of one or the other is a choice of the one who speaks/writes

2. I always miss adding "pe care" in sentences. It is because I'm not sure why it goes there. Maybe you can help me understand this?

Let's take your sentence:

I'm probably the last person from (whom) you expected to hear today.
Sunt probabil ultima persoană pe care te aşteptai să o auzi azi.

In English it is already implied and you can avoid writing it, but in Romanian you must mention it.

3. I am told that voiam is correct. But that people use vroiam also. In my experience, everyone writes vroiam but is it true that voiam is okay also or is it wrong?

Voiam comes from the verb a voi.
Vroiam should come from the verb a vroi. There is no such verb a vroi, but it is accepted as correct only its third person singular form - vroiam.

So both forms are correct.

Actually, "voiam" comes from the verb "a vrea" - "to want" , and "voiam" is the right form. I don't know why people use "vroiam" instead

Actually, voiam comes from the verb a voi. It's a big dispute whether vroiam can be accepted as a hybrid form between vream and voiam.

I currently understand that "a voi" isn't used in everyday speach. just maybe in poems and in archaic. This one is confusing to me bc as i said, i never see people use voiam. only one person actually. And everytime i use voiam, i am corrected with vroiam.

Unde sunt profele de pe forum când ai nevoie de ele? În fine, văd că ați reușit să-l lămuriți pe Mike cum e cu a vrea și a voi, însă dorințele alea nu v-au zgâriat urechile? De ce să nu traducem noi my wishes cu urările mele de bine? Zău că sună altfel.

Come on its not "a voi" the right form its "a voii" )
a voi=aaa you(plural)
a voii=to want
a voii=a vrea
All of them are correct and means the same thing.
The most use it i believe its "a vrea".
EX: Eu vreau sa merg la cinema.(i want to go to the cinema)
Eu voiesc sa merg la cinema.

No it's pronounced with one "i". And no offense but I don't think it was ever written with two i''s. At least that's what they taught me in school.
