Sayma yıllarını kaç oldu diye > When we paraphrase this sentence, it becomes something like "Kaç olduğunu bulmak için yıllarını sayma." I can't explain this word on its own as it doesn't mean a lot. It means something like diyerek/sorarak (by saying/asking)" here.
Kim demiş ki sevmek suç oldu diye > It means "Sevmenin suç olduğunu kim söylemiş/demiş". It's rather a poetic expression here. I want to use the term "bad Turkish" but I can't as it can be done in poems/songs. You wouldn't normally say "Kim demiş sevmek suç oldu". You would say one of the sentences I paraphrased or you would say this sentence but not with a "diye" at the end of it because it's unnecessary. It seems that it is used to make it rhymed here.
Yanma gençliğine hiç oldu diye > Here it is used to mean "because". "Because it has become nothing" or when interpreted, it means "Because it has been spent in vain/for nothing". When paraphrased, it becomes something like ""Hiç olduğu için gençliğine yanma"
