Does 'quiero comerte a besos' mean I want to eat you to kisses? If it's with kisses then I don't understand why it's not 'con besos'. ?
And is X normally used in place of "por" in any case or just before 'fin'?

X you know is the multiplication sign and in spanish it's pronounced as 'Por' so that's way some people uses the sign when they want to say por in any case but you already know it's a slang

Tomando* cerveza* me viene bien.
Tomando cerveza me conviene.
Exercising is good for me / suits my interest
Haciendo ejercisio me conviene.

In English, beer is singular. Is that the case in spanish? Is it wrong to say: tomando cervezas?

I'm not exactly sure but to my ear it sounds better to put the gerund after instead of at the beginning. Also, I would use the infinitive.
Me viene bien tomar cerveza.
Me conviene tomar cerveza.
Me conviene hacer ejercicio.
