Gran - I don't know what to say; this is a weird question, in my opinion
If you say "grande", "día" has to come first, and the sentence would mean "It will be a big (as in [i]large[/i ] day," which sounds odd in Spanish to me.
"Un gran día" means something more like a "grand day", although I'd never say that in this way.
Just for your reference, fantástica has 2 reasons why it cannot work... 1. The obvious - it's feminine, and día is masculine, as Viva pointed out already (I think she said "male"?
) and 2. because it would have to follow día ("un día fantástico"). Adjectives will often follow the noun they're modifying in Spanish.
